The Cangshan Kita 6" Chef's Knife is a compact all-rounder. It handles push cuts and the rocking motion, so it slices, dices, minces and chops meat, vegetables and fruit. The wide blade keeps cuts straight and under control through firmer foods such as starchy root vegetables.
The full-tang blade is forged from 67 layers of Cangshan's proprietary X-7 Damascus steel. It gets Cangshan's ULTRA6 heat treatment and is hand sharpened to a 16° edge at 60 Rockwell. The hammered finish cuts drag and helps food fall off the blade. The octagonal G-10 fiberglass handle has a blue-and-black wood-grain pattern, resists moisture, grips securely, and is set with a single mosaic rivet.
The knife comes with a magnetic blue ash wood saya-style sheath to protect the edge in a drawer or on the road. Wash it by hand and dry it right away, and keep it out of the dishwasher.
