Kaizen is Japanese for "change for the better," and these steak knives are a real upgrade at the table. Four thin, Japanese-profile blades slice through steak, chops and roasts cleanly, and the hand-honed edge stays sharp far longer than ordinary steak knives.
Each blade has a VG10 super steel core protected by 64 layers of flower Damascus, CRYODUR ice-hardened to Rockwell 60 for hardness and corrosion resistance, and hand-honed with the three-step Honbazuke method to a 9.5° to 12° edge. The D-shaped black linen Micarta handle has a wood-like texture that won't slip in your hand and stands up to moisture. Handcrafted in Seki, Japan.
